When removd from an over, the internal temperature of beef wil increase by approximately 5 degrees (F), pork will increase by 3-5 degrees (F) and chicken will increase by 3-5 degrees as well. Fish will DECREASE by 5 degrees almost immediately unless sauced or coated. – Waldo Weyeris
